Cakes for Mother's Day

One of my close friends had been telling me to go find a real good carrot cake. Since I like carrot cakes too, I checked out a recipe that I came across in Mich Turner's book. It turned out to be really good. It was so good that I decided to use it as a base for the 2 cakes I did for Mother's Day. One was for my mother, the other was for my mother-in-law.



I made the cakes, frosted them with a thin layer of cream cheese frosting and then covered them with fondant. This recipe calls for more ingredients than the carrot cakes I have eaten before and the most time-intensive part was grating the carrots, but the result was well worth the effort.

For these 2 cakes, I also made the effort to cover the cake board and use ribbons as part of the decoration. It was a waste of fondant (on the cake board), but it made the cakes looked so much more dressed up, I was beaming to myself with satisfaction when I completed them.

For an amateur like me who had not mastered the art of perfect cake borders, the ribbons were also a life-saver, for they hid all the flaws and unevenness of the fondant around the border.

The cakes were moist, full of flavours and packed with ingredients. I will add the recipe to my recipe blog soon (when I have time to type it out) you can try it out!
